Hydroxymethylfurfural (HMF) testing ensures that Manuka honey has not been subjected to excessive heating or prolonged storage, thereby preserving its unique properties.

The primary components of honey (70% by weight) include sugars (fructose, glucose), water, proteins (enzymes), minerals, vitamins, and bioactive compounds. The medicinal properties of honey vary depending on the floral source. Manuka honey is a monofloral honey derived from the Manuka tree. Its antibacterial and antioxidant properties stem from high concentrations of methylglyoxal and interactions with other bioactive compounds unique to Manuka honey. Due to its lower glycemic index, Manuka honey may be more suitable than regular white sugar for blood sugar management.
